Why did Jesus choose Matthew, a known taxgatherer and a despised man, to be His disciple?
Because it is the sick that need to be healed, the sinner that needs to be forgiven. Since Mathew was a sinner, if he could see the light and repent and be saved, he would make the best teacher to help spread the word of the Lord.

I think the message here was being directed at the Pharisees and by extension to the rest of the 'religious' communities that have followed. They believed that they were better (had more favor with God) because they were followers of the law.

The tax collectors were working for the Romans and were seen as traitors.

I think this was one of the ways Christ was showing the Pharisees that they were not all that they though they were.

Tax Collectors and Sinners

Jesus called Matthew to follow him because he WAS a tax collector.  He knew Matthew was one of the people who was sick and needed a doctor.  By going to Matthew's house for dinner, Jesus knew he would be in the company of tax collectors and sinners. 

Jesus shows us that when we are being Christlike, we welcome the opportunity to carry the gospel to all mankind, not just to believers (the healthy).  The Mercy he desires means that we should be merciful with everyone; not showing favoritism or wanting anyone to perish.

It is true that Jesus Christ came to this world to call all the sinners and to give mercy, to repent are being reunited in God the father in heaven.

Jesus says, Those who are healthy have no need for a physician, but those who are sick do, I desire mercy, and not sacrifice, ` for i came not to call the rightesous, but the sinners to repentance. This is the simple reason to why Christ called Matthew.

Why did Jesus choose Matthew, a known taxgatherer and a despised man, to be His disciple?
Jesus came here to teach us to love one another - no matter who you are or where you are from or what you do - God is our Father and we are commanded to love one another. Jesus chose an unlikely candidate for His disciple as an example of this love.

its` a sign of Hope and Love. Not only Jesus came to heal all the sick, however serious the sikness is - and which truly committed doctor would deny healing? - but the sick one cannot only gain health but also become a bringer of that health to others.

The Calling of Matthew

As Jesus passed by from there, he saw a man called Matthew sitting at the tax collection office. He said to him, "Follow me." He got up and followed him. It happened as he sat in the house, behold, many tax collectors and sinners came and sat down with Jesus and his disciples. When the Pharisees saw it, they said to his disciples, "Why does your teacher eat with tax collectors and sinners?"
When Jesus heard it, he said to them, "Those who are healthy have no need for a physician, but those who are sick do. But you go and learn what this means: 'I desire mercy, and not sacrifice,' for I came not to call the righteous, but sinners to repentance."
